Here I am sharing a delicious and healthy chicken recipe that I made with pomegranate juice. For an extra zing I also added sumac powder, which is a powder form of dry berries popular in Middle East and Mediterranean cuisine.

Ingredients and spices that need to be Make ready to make Pomegranate Chicken:

  1. For Marinating
  2. 500 gm boneless Chicken
  3. 1 cup Pomegranate arils
  4. 1 teaspoon Sumac powder
  5. 1 tablespoon Ginger-Garlic paste
  6. 1 teaspoon Kashmiri red Chilli powder
  7. to taste Salt
  8. Other Ingredients
  9. 1 cup fresh Pomegranate arils
  10. 1 Beetroot(optional)
  11. 1 teaspoon Honey
  12. 1 tablespoon Cornflour
  13. 1 tablespoon Olive oil
  14. to taste Salt
  15. 1 handful chopped Coriander leaves

Steps to make to make Pomegranate Chicken

  1. Cut skinless and boneless chicken into 1" broad strips.
  2. Place the chicken pieces to a mixing bowl and add in 1 teaspoon sumac powder, 1 teaspoon kashmiri red chilli powder, 1 tablespoon ginger-garlic paste and salt.
  3. Mix well with your hand, cover and set aside for an hour to marinate.
  4. Take fresh pomegranate arils and blend them to make juice. I added a small piece of beetroot to enhance the colour of juice.
  5. Transfer to a sieve to separate seeds from the pomegranate juice. Set aside the extracted juice.
  6. After an hour of marination, take out the chicken pieces. Heat a skillet with 1 tablespoon of olive oil and add in the chicken pieces.
  7. Cook in high heat for 5-6 minutes to make the pieces light brown.
  8. Add in half of the pomogranate juice to the chicken.
  9. Stir well, cover and cook in medium heat for another 5 minutes.
  10. After 5 minutes, remove the lid, stir and add in 1 teaspoon of honey. Mix well. Add in salt if necessary.
  11. Now mix 1 tablespoon of cornflour to remaining pomogranate juice.
  12. Add in to the chicken, give a last stir.
  13. Sprinkle some chopped coriander leaves and remove from heat.
  14. Delicious, healthy stir fried pomegranate chicken is ready now. It's little sweet with some tartness from pomegranate and sumac.
  15. I served this special chicken dish with some saffron flavoured jewel rice.
